Cinnamon Coffee-Cake

from RedStarYeast company.

Makes 1 large or 2 small cakes.  375. 20-30 min.
Sugar                                          1/2 cup
Salt                                               1 tsp
Bread flour                                    3 cups
Soft shortening                            1/2 cup
Water                                            1 cup
Active dry yeast                            4+1/2 tsp
Eggs                                              2
vanilla                                            1 tsp

Cinnamon-crunch topping.
1/2 cup crushed, and 1 1/2 cup uncrushed wheat, corn, or rice chex.
1/2 cup sugar, 1/2 tsp cinnamon, 3 tbsp melted butter.  Press down over dough, let rise, double 20-30 minutes, then bake 375. for 20-30 minutes.

Serve with coffee, or tea. Which would you serve it with? I personally prefer, french roast coffee.
